Crockpot Clam Chowder

This is another one that I make at least once every winter. Plus it's great because it can cook on high for just 2-3 hours, which is great for me because I love my crockpot but often forget to start things early enough.

Ingredients:

  • 2-3 slices bacon, diced
  • 2 onions, chopped
  • 2 stalks celery, chopped
  • 5 cans (6.5 oz each) clams, drained and liquid reserved
  • 6 medium red potatoes, cubed
  • 2 tbsp minced garlic
  • 1 tsp black pepper
  • Old Bay seasoning to taste 
  • black pepper
  • 2 cans (12 oz each) evaporated milk)
Directions:
  • Cook bacon, onions, and celery in skillet under bacon is cooked and onions are tender. Add garlic and cook for 1 minute. Place in crockpot.
  • Add water to clam juice to make 3 cups liquid. Pour into crockpot, and add potatoes, garlic, Old Bay, and pepper. Cover and cook on Low 5 to 8 hours or on High for 2 to 3 hours.
  • Turn heat to Low. Mix in clams and milk. Cover and cook for 1 hour. Adjust seasoning if necessary.
